Low Carb Fried Rice for more energy
Low Carb Fried Rice is my new go to for a quick meal for lunch, dinner or even breakfast. It’s full of all the flavor and none of the carbs that can bog you down. I like a good bowl of traditional fried rice, but I unfortunately never feel energized after eating it. Instead I want to take a nap and have no motivation to do anything. Which if you do choose to make regular fried rice it may be a better meal to have for dinner to help you fall asleep. This is when Dave Asprey the founder of Bulletproof believes you should have carbs if you choose to consume them. He also came up with a way to make traditional rice more Keto friendly. But getting back to our low carb version of this delicious dish. The majority of the flavor for the dish comes from the powerful trio of: ginger, garlic and green onion. With these three together you know your dish is going to taste delicious! And you get the additional benefits of better digestion, an antifungal and also antihistamine assistance. It’s always a nice benefit when your food is not only tasty but also nutritious. It is a true win win.
A Superfood Vegetable
It is not my first time to eat more low carb meals, but I have to admit I did not truly embrace all the low carb vegetables you are encouraged to eat. Dr Berg is always saying to eat a lot of big salads with your meals but I did not completely embrace it. But I am not talking about a salad in this post as I am not making that in this recipe. The Vegetable I am talking about instead is: “Cauliflower.” I am ashamed to say I did not know how nutritious this Keto Vegetable truly is.
It is a Vegetable that Dr Berg calls a “Superfood” and for good reason too. The no. 1 nutrient to shine on is vitamin C. It gives you 85% of RDA of vitamin C. This helps with oral health, like bleeding gums, it is a powerful antioxidant, good aiding in Collagen production, improves energy and can boost your immune system. Other nutrients to note are: choline, phytonutrients, K1 which can be converted by the body to K2 and is also full of many B vitamins: B1, B2, B3, B5, B6 and B9 (folate). Fat and Protein
And the last thing of note in this recipe is the fat that I use. I would strongly recommend using lard. It is not only delicious and a good source of vitamin D. But it is also the traditional fat that Asian cultures would use in cooking. And for some protein for satiety the best and most delicious options are bacon or smoked ham hocks are great (I purchase ham hocks from Pawnee Pride meats). Also you cannot have fried rice without eggs. I use three per person to have a decent amount of protein. Also to aid in detox and digestion, Cilantro Sprinkled on top is not only helpful but also gives a different flavor. Feel free to add more spice by adding a jalapeno if you wish.

Low Carb Fried Rice
Serves 2
3 to 4 Tablespoons of Lard (possibly more as Cauliflower sucks it all up)
½ head of Cauliflower
2 carrots
2 green onion
2 garlic cloves
½ inch Ginger
4 rashers bacon
6 eggs
1-2 Tablespoons Coconut aminos ( Tamari soy if you are not sensitive to soy)
Salt and Pepper to taste
Cilantro to Garnish
1.Place bacon in a frying pan and heat to medium. Turn every so often till mostly Crispy (can cook to your liking).
2.While the bacon is cooking, prepare your other ingredients. Use a grater or food processor with grater attachment to make Cauliflower rice.
3.Grate carrots, ginger and garlic. Dice Cilantro and set aside.
4.Once the bacon has cooked, remove it to a chopping board, dice when cooled.
5.Add the Cauliflower rice and grated Carrot to the pan with the bacon fat. Cook until the Cauliflower is browned and softened. Scrape up any brown bits from the bacon and add more fat so the Cauliflower doesn’t burn.
6.Once cooked add the eggs and scramble it into the Cauliflower rice, add the coconut aminos and salt and pepper.
7.Serve up the fried Cauliflower rice and add the bacon and cilantro.
8.Enjoy!
