Sweet and Sour Kielbasa in the Instant Pot

Sweet and Sour chicken is my favorite take out meal. I don’t have it very often on account of being gluten free. But if someone decides to open a paleo restaurant. And happens to sells some sweet and sour chicken, you better believe I will be visiting your establishment! Anyway if you read the title you will know that we are not making sweet and sour chicken but instead sweet and sour kielbasa which is also delicious! And my toddler and husband love this meal so it is a mega win in my books.

One pot meals for less Dishes and to save time

Also it’s all made in the Instant Pot which saves on time as well as dishes. It’s a great meal for a stress free weekday or an easy meal to put on after you’ve been out all day in the weekend. It also works great for when you have those times when you forget to take meat out of the freezer to defrost. I know myself I have been there more times than I would like. With this meal your meat is already in the fridge and ready to go, so no worries.

If you have toddlers or kids I guarantee they will love this meal for the sausages and tomato sauce, as well as for the pineapples. It is technically more of a paleo meal because it is higher in carbs on account of the pineapple. So if you are low carb you could cut the pineapple amount in the recipe in halve and it would lessen the carbs. You could also add a bit of allulose to make it taste a bit more sweeter if you would like as well.

And lastly it is not a requirement to have pork cracklings but they are pretty good. The taste and texture remind mevof the batter on the chicken with sweet and sour chicken. But unlike the conventional sweet and sour chicken that uses a gluten batter and is fried in hydrogenated vegetable oil, these cracklings are instead just fried pieces of pastured pork fat. You really can’t beat it!

For anytime you are craving takeout but can’t eat it on accord of your allergies, I promise you this meal will hit the spot. With the wonderful sweet and sour taste that we all know and love, and addition of some tasty kielbasa sausage. Try this recipe today, and I am sure it will become a family favorite.

Sweet and Sour Kielbasa in the Instant Pot

2 Tbsp sesame oil

2 14oz packages Kielbasa

1 medium red onion, halved and then chopped into 1 inch pieces

1 Bell pepper cut into 1 inch-2 inch pieces

3/4 cup frozen pineapple chunks*

24ozs Frozen Broccoli and Cauliflower Florets (can use fresh instead)

1/2 tsp salt

For the Sauce:

2/3 cup Apple Cider Vinegar

2/3 cup Low carb or Paleo Ketchup

2/3 cup Pineapple chunks (for pineapple puree)*

1 cup coconut aminos

4 Garlic cloves

2 tsp Chinese 5 Spice seasoning (optional)

2 tablespoons Tapioca starch mixed with 1/4-1/3 cup cold water

1 1/2 cups Pork Cracklings

1.Chop up the veggies and slice the kielbasa into slices. Add some fat to your Instant Pot and set it to ‘saute.’

2. Add the Kielbasa to the Instant pot and stir every so often for about 10 minutes. When it looks brown on each side turn off the saute function.

3. Add all your vegetables including the pineapple pieces. Blend the pineapple for your sauce in a blender. Stir all your sauce ingredients together and add in the pineapple puree from the blender.

4. Set the Instant Pot to ‘manual high pressure’ and set it to 5 minutes. Make sure your venting nob is turned to ‘sealed.’

5. Once done, do a quick release by turning the nob from ‘sealed’ to ‘venting.’ Remove the lid from the Instant Pot

6. Set your Instant Pot to ‘saute’ and stir the tapioca with the water. Pour the tapioca slurry into the sweet and sour mixture in your Instant Pot. Stir for about 2 minutes or till your sauce has thickened.

7. Optional: You can add a 1 1/2 cups of pork rinds for added fat and deep fried texture.

8. Serve up in bowls. Also great as leftovers!

Note: You can use 1 can of pineapple tid bits in pineapple juice instead of using frozen pineapple. Use the pineapple juice instead of making the puree in the sauce.

Sweet and Sour Kielbasa is just as good as getting takeout but better. With no added sugar or hydrogenated oils, you can enjoy this take out favorite without the unwanted consequences.
