Easy Spaghetti and Kielbasa

Easy Spaghetti and Kielbasa is a meal that your kids will love and will ask you to make repeatedly. If you are in a rut and your kids just don’t want to eat anything this will be for sure a winner.

And it is not only inexpensive but I made it on the fly with things I already had in the cupboard. There are also ways you can substitute ingredients if you don’t have what I have. It’s a recipe that can definitely be adjusted quite easily.

I am a gluten free eater but I will feed my kids gluten food at times. When it comes down to it Wheat is cheaper. But if I do buy wheat products I will buy it organic.

I mention this because the Spaghetti I used was of the wheat variety. This pasta was leftover from my sister who briefly visited me. You can of course use any pasta you prefer. Whether it be gluten free, shirataki for keto or even zoodles or Spaghetti squash.

Also I used tomato paste in the recipe but you could easily use tomato sauce with not as much liquid if that is all you have on hand.

Easy Spaghetti and Kielbasa

5-6 child size servings (2-3 Adult servings)

14ozs Kielbasa

4-6ozs Spaghetti or desired pasta*

2Tbsp Tomato paste

1/2 cup broth with additional water (can use all broth or all water)

2tsps Italian seasoning (or to taste)

Salt and Pepper to taste

Veggies if you desire

1. Cook pasta according to package instructions.

2. While pasta is cooking, slice Kielbasa and cut into quarters.

3. Add kielbasa to a saucepan with your tomato paste, italian seasoning, broth and enough water to just cover your Kielbasa.

4. Heat over medium heat for 5 to 10 minutes till heated through.

5. Once pasta is cooked, strain pasta and put it back in your pot.

6. Add your Kielbasa sauce to your Spaghetti and stir to combine.

7. Serve as is or topped with grated cheese.

Notes

You can break the pasta into smaller pieces to make it easier for your child to eat. Just break it before you cook it.
