Fried Sweet potato is one of my favorite foods, you really can’t beat it! And although it pairs well with bacon and sausage I just can’t afford to eat meat with my breakfast everyday. 

But thankfully I have some tasty vegetarian alternatives that are paleo, gluten free and full of flavor. This morning I am combining fried sweet potato with egg and avocado. And I can truly say that I do not miss meat at all with this dish!

It’s also great for covering all your macros with sweet potato as your carb, eggs your protein and avocado as your fat. You really can’t beat the balance in this meal. And fried sweet potatoes pretty much bring flavor to anything.

And the Avocados are a great source of fat and some would even say they are great to have daily. But as much as I would like that I think it would be a bit too much on the weekly budget. It is also a lot more healthy to rotate your foods, I am not always best at this but I am learning! 

Picking the Right Avocado

When looking for a ripe avocado you want it to feel fairly firm but when you squeeze it gently it should give a bit. Sometimes this can still be hit or miss for me.

My tried and true method is to buy green avocados and wait for then to ripen. Growing up my mum would put them in our warming cupboard. But there is another hack that I use that I think will work even better.

All you need to do is to add your green avocados to your bananas. Within a day or two your avocados will be ripe and ready to use. Just don’t forget about them! I have done this and had to throw out most of the avocados that I was ripening.

Choosing the best food for your budget

Most people recommend organic for the best quality. While this generally is true, when it comes to produce it needn’t always be so. For me I get most of my food organic but will still buy a few of the conventional produce because it is not heavily sprayed. Yes it’s not organic but it is overall cheaper and I know my family is not being filled with pesticides. In the US we have a page on EWG that tells you about the “Dirty Dozen” which is the most sprayed produce and the “clean fifteen” which is the least sprayed. It is good to check the page every so often as it can change.

Fried Sweet potato with Eggs and Avocado

1 Avocado

2 sweet potatoes

4 to 6 Tbsp lard (or as much as needed)

6 eggs

Salt and Pepper to taste

1 cup spinach leaves (optional)

1.Chop sweet potato into half inch squares.

2. Heat lard or fat of choice in a skillet over medium heat. 

3. Add sweet potatoes to the preheated skillet. Leave the sweet potatoes to cook for a few minutes.

4. Stir them around every so often so the sweet potatoes don’t stick. 

5. Add spinach to plates (optional).

5. When the sweet potatoes look golden and crispy add to the top of the spinach.

6. Scramble, fry or make an Omelet with your eggs and add it on top of your sweet potatoes.

7. Enjoy with hot sauce or condiment of choice.

  • 1 Avocado
