Chicken Nuggets a Keto Superfood

Chicken nuggets a staple food of any toddlers diet. Well any toddler but mine. I am sorry to say he doesn’t like chicken nuggets and not even the ones in the recipe. He liked the ketchup however.

He always likes the sauce. And anything we are drinking he must have. I do Wonder sometimes if he would prefer a liquid only diet? And I would believe it if I hadn’t seen him eat sausages and crackers.

All I know is toddlers are crazy and also the most irrational creatures.

Anyway moving back to chicken nuggets. It’s whats for dinner afterall or maybe your afternoon snack. Maybe it was your go to quick eat from McDonald’s in your life before low carb but you haven’t dared to eat them since changing your diet.

Well if you have missed those golden chicken nuggets I am happy to report that these chicken nuggets are not only more healthy but may I say just as tasty as the McDonald’s version perhaps even more so.

They are baked but you would swear they were fried if you didn’t know they were baked. Cooking them in the oven takes away the stress of frying as well as saving your healthy fats for more low carb meals.

Also to make this a superfood chicken nugget like the title says you can add in 1 pound of chicken hearts to your ground chicken. If you would prefer not to have the hearts just use another pound of ground chicken.

The choice is yours. I will say you don’t notice the hearts at all in this recipe so if you are game add them for little extra nutritional boost you won’t regret it!

Serve with my ketchup or mayo.

Chicken Nuggets a Keto Superfood

3 3/4 cups Pork Rinds

1 tsp Onion powder

1 tsp Garlic powder

1 tsp salt

1 tsp Cilantro

1 tsp dried mustard

2 lbs ground chicken

1 lb Chicken hearts

1 tsp garlic powder powder

1 tsp salt

1 tsp chili powder

3 Tbsp fat of choice

  1. Preheat oven to 375F and line a baking tray with parchment paper.
  2. Grind pork rinds till they resemble panko breadcrumbs.
  3. Put them in a bowl and add the garlic powder, onion powder, cilantro and salt. Stir to combine.
  4. Place chicken hearts in a food processor and process till they resemble ground meat. Pour ground hearts into another bowl with the ground chicken.
  5. Add garlic powder, chili powder and salt to the ground chicken mixture. Mix till combined.
  6. Scoop about a tablespoon of the ground chicken mixture and roll it in the pork rinds. Put it on the prepared tray and flatten it.
  7. Repeat with the rest of the chicken and pork rind crumbs. Drizzle some oil on top of the nuggets.
  8. Put the nuggets in the oven for 7 minutes. Flip over the chicken nuggets and put them back in the oven for another 7 minutes.
  9. Remove from oven and eat as is or with Buffalo sauce, ranch, celery or rutabaga fries.

Note: You will want to buy two 5oz bags of plain pork rinds to make sure you have enough breading.
