Low Carb Fried Rice
Love Fried rice but not how it makes you feel? Well have no fear this low carb version gives you all the flavor without feeling bogged down. Enjoy being nourished and energized with the delicious recipe!

- 3 to 4 Tablespoons of Lard possibly more as Cauliflower sucks it all up
- ½ head of Cauliflower
- 2 carrots
- 2 green onion
- 2 garlic cloves
- ½ inch Ginger
- 4 rashers bacon
- 6 eggs
- 1-2 Tablespoons Coconut aminos Tamari soy if you are not sensitive to soy
- Salt and Pepper to taste
- Cilantro to Garnish
Place bacon in a frying pan and heat to medium. Turn every so often till mostly Crispy (can cook to your liking).
While the bacon is cooking, prepare your other ingredients. Use a grater or food processor with grater attachment to make Cauliflower rice.
Grate carrots, ginger and garlic. Dice Cilantro and set aside.
Once the bacon has cooked, remove it to a chopping board, dice when cooled.
Add the Cauliflower rice and grated Carrot to the pan with the bacon fat. Cook until the Cauliflower is browned and softened. Scrape up any brown bits from the bacon and add more fat so the Cauliflower doesn't burn.
Once cooked add the eggs and scramble it into the Cauliflower rice, add the coconut aminos and salt and pepper.
Serve up the fried Cauliflower rice and add the bacon and cilantro.
