Easy Roasted spaghetti squash is a side you will eat more and more of when you learn how easy it is to make. And it is so versatile and naturally gluten free.
If you are feeling like Spaghetti you can make your normal meat sauce and serve it with Spaghetti squash, and it tastes just as good or better than eating it with pasta. Bonus points it is also a fun way to possibly get more vegetables into your kids. Mine are a bit hit and miss when it comes to what I make but I have had successes here and there.
Another great dish that many people use Spaghetti squash for is ramen. I have not tried this yet but will have to make it sometime for sure. I have tried a lot of dishes with zoodles but I think prep wise Spaghetti squash is just that much more easier.
Another dish I have tried is chicken Noodle soup. Spaghetti squash worked very well in this dish. And it made for quite a hearty meal which is what you want in winter.

Easy Roasted Spaghetti Squash
1 large Spaghetti Squash
Fat or oil
salt and pepper to taste
1.Preheat oven to 400F.
2.Cut Spaghetti Squash in halve width wise. Many people say to do lengthwise but I have heard width wise gives you more longer noodles.
3.Scoop out seeds and discard or put aside for roasting.
4.Sprinkle fat or oil on the inside of Spaghetti squash and sprinkle with salt and pepper.
5.Place Spaghetti squash cut side down on a lined baking pan for 40 minutes.
6.Let it cool for 10 to 15 minutes and use fork to scoop out the Spaghetti squash noodles. Serve it up with your dish of choice and enjoy!
