Pumpkin Spice and Raisin Waffles

Pumpkin Spice is now in season again. Though I will admit there is no pumpkin in this recipe they I may try and make version with some. These waffles are of course gluten free and also grain free. The flour I use in this recipe is cassava. It is a popular flour substitute in the paleo community as it can act very similarly to wheat flour.

I am still however getting accustomed to this flour, the cookies I made were not quite how I was hoping so will not post a recipe for that yet. For tortillas however they are quite good, this is the recipe I have been using, it’s not as easy as gluten but it does come out very well. As in its sturdy enough for tacos and quesadillas.

Successes and failures aside its a decent paleo flour or if you are carb cycling. If you completely keto its a no go as it has way too many carbs. But there are definitely keto pancakes you make with almond flour or coconut flour instead. And actually I think that will be my next recipe I will make really soon.

The other two ingredients which are your flavour are of course the pumpkin spice and raisins. I thought of the raisins not only because Spice foods tend to have dried fruits but because my son is a huge fan and it’s a struggle to find anything he will eat. So if your kid likes dried fruit this will probably be a winner.

Another thing I have also been working on doing is making the meals I make more convenient, so you could make a whole batch the night before and freeze them. The next day just pop however many you need in the toaster and it’s simple as that.

Pumpkin Spice and Raisin Waffles

1/3 cup + 1Tbsp Cassava flour

1/2 tsp Baking Powder

1 pinch salt

2 Tbsp Jam

1 egg

3/4 cup Milk or milk alternative

1 Tbsp Oil

1. Heat your waffle maker.

2. Whisk all ingredients together in a bowl.

3. Spray waffle maker with oil.

4. Pour waffle mixture onto preheated waffle maker until you don’t see the waffle shape coming through. Only just cover, if you add too much it will come out the sides.

5. Cook for 4-6 minutes depending on make of waffle machine or donesness of waffle.

6. Freeze* or enjoy.

*For freezing place waffles on a tray or whatever will fit in freezer. I used a lid from a casserole dish. Freeze for 30 minutes to an hour until fairly solid. Remove from tray and put in Ziploc. When ready to eat, remove from the Ziploc and put in the toaster on 1 or 2. Enjoy!
