Fried Sweet potato with Eggs and Avocado
Fried Sweet potatoes with Avocado and egg is tasty for any vegetarian or meat eater. If you are short on meat or feel like you need a break this is great east, tasty addition to your weekly breakfast meals.

- 1 Avocado
- 2 sweet potatoes
- 4 to 6 Tbsp lard or as much as needed
- 6 eggs
- Salt and Pepper to taste
- 1 cup spinach leaves optional
1.Chop sweet potato into half inch squares.
Heat lard or fat of choice in a skillet over medium heat.
Add sweet potatoes to the preheated skillet. Leave the sweet potatoes to cook for a few minutes.
Stir them around every so often so the sweet potatoes don't stick.
Add spinach to plates (optional).
When the sweet potatoes look golden and crispy add to the top of the spinach.
Scramble, fry or make an Omelet with your eggs and add it on top of your sweet potatoes.
Enjoy with hot sauce or condiment of choice.
