Grilled Norwegian Mackerel is a really delicious and satisfying meal. Especially because Norwegian Mackerel is full of healthy omega 3s.
You knew all about salmon having omega 3s, but did you know that there are other fish just as rich in the omega 3 department? Some of these other fish are sardines, anchovies, herring and of course mackerel.
Sourcing Mackeral
As far as I know, in the Midwest you can only find Mackerel mostly in cans. But if you seek out your local Asian market you might just find some fresh Norwegian Mackerel.
My local Asian market sells it for $2.99lb which is a great deal in comparison to wild salmon which is priced around $11.99lb. Such a big price gap yet both provide a great amount of omega 3s. If you are on a tight budget like me, definitely seek out your local Asian market, you just never know what you may save on.
One meal adds to many more
Anyway, moving on. This fish is cooked whole. I do get the fish monger to remove the guts but not the head. I like to cook a whole fish because I like to keep the head and bones for making fish broth. Some of the most nutritious foods you can consume are bone broths. They are high in collagen and full of nutrients.
If you grew up eating fish heads you, do you. I am a bit more squeamish, but I do feel better about using them in my broth, so I know they do not go completely to waste.
So going forwards definitely save any of your bones whether fish or land mammal. Make a broth with them and add it to soups, stews, sauces or just drink as a comforting warm beverage.
This is also a great reason to buy meat with bones in it. It gives you an additional benefit because you will be adding the broth that comes from your bones to several meals. And you Save money on broth. You are also giving yourself an extra nutritional boost in the process.
Grilled Norwegian Mackerel
2lbs Norwegian Mackeral
1Tbsp Peppercorns
1 jalapeno
2 Garlic Cloves
3 inches of Garlic
1Tbsp salt
8 cups Filtered Water
4 cups Ice
Old Bay for extra seasoning
- Prepare a pan by wrapping foil over it and add a grill rack on top.
- Cut jalapeno in halve, cut ginger into little chunks and crush the garlic. Add the jalapeno, ginger, garlic, peppercorn and salt to a large saucepan with 4 cups of Filtered Water and bring to a boil.
- Meanwhile wash your fish and pat dry with paper towels. Cut slits in the fish so the brine can penetrate into the fish more easily. Put in a glass casserole dish that is big enough to contain the fish.
- Once your saucepan begins to boil, quickly remove it from the heat and add your 4 cups of ice. Stir and add another 4 cups of Filtered Water to the pot.
- Pour brine over the Mackerel and sprinkle another tablespoon of salt on top of the fish. Let it sit in the brine for 20 minutes.
- Turn the broiler on.
- Once the 20 minutes are done place the Mackerel on top of the grill rack and sprinkle with salt. Add 2 cups of water to the bottom of the pan.
- Place in the oven and cook for 7 minutes. After 7 minutes remove the tray from the oven and flip the fish over. Salt it and put it in for another 7 minutes.
- Remove from oven and sprinkle with Old Bay seasoning. Serve it up with rutabaga fries or a light salad.
