Grilled Norwegian Mackeral

Delicious Norwegian Mackerel that is full of omega 3s and flavor. Eat it by itself or with a side of rutabaga fries or a salad.

Ingredients
  

  • 2 lbs. Norwegian Mackerel
  • 1 Tbsp Peppercorns
  • 1 Jalapeno
  • 2 Garlic cloves
  • 3 inches Ginger
  • 1 Tbsp Salt
  • 8 cups Filtered water
  • 4 cups Ice
  • Old Bay for extra seasoning

Instructions
 

  • Prepare a pan by wrapping foil over it and add a grill rack on top.
  • Cut jalapeno in halve, cut ginger into little chunks and crush the garlic. Add the jalapeno, ginger, garlic, peppercorn and salt to a large saucepan with 4 cups of Filtered Water and bring to a boil.
  • Meanwhile wash your fish and pat dry with paper towels. Cut slits in the fish so the brine can penetrate into the fish more easily. Put in a glass casserole dish that is big enough to contain the fish.
  • Once your saucepan begins to boil, quickly remove it from the heat and add your 4 cups of ice. Stir and add another 4 cups of Filtered Water to the pot.
  • Pour brine over the Mackerel and sprinkle another tablespoon of salt on top of the fish. Let it sit in the brine for 20 minutes.
  • Turn the Broiler on.
  • Once the 20 minutes are done place the Mackerel on top of the grill rack and sprinkle with salt. Add 2 cups of water to the bottom of the pan.
  • Place in the oven and cook for 7 minutes. After 7 minutes remove the tray from the oven and flip the fish over. Salt it and put it in for another 7 minutes.
  • Remove from oven and sprinkle with Old Bay seasoning. Serve it up with rutabaga fries or a light salad.
