Easy Vegan pudding, that’s almost as simple as taking pudding from the fridge. As a mom the more simpler the better. And when your toddler is fussy like my little boy, simple and easy is the best.
In regards to his appetite, he used to eat really well but now he has gone the way of many other children his age. Not to say that he is all chicken nuggets and hot dogs. He does like sausages but is not crazy for breaded chicken.
So in an effort to find foods that my fussy boy will eat, this will be the first post in a series I will be calling “Toddler Tuesday’s”. Each Tuesday I will be offering my boy a classic toddler food or a crunchy approved toddler meal. And hopefully he will add some more foods to his diet. And maybe it will help some of you who also have fussy children find foods that your children enjoy.
So this week we are starting with a big favorite here, chocolate pudding cups. I do consider it more of a dessert than a meal, but of course what toddler cannot resist something sweet?
This version is a paleo and vegan option without any additives or processed ingredients. And the sugar content is mild at best, using either honey or maple syrup.
And for an additional plus you can feed your little one some added fats and nutrients through the Avocado. My boy doesn’t like Avocado normally not even in guacamole. But maybe disguised as a dessert it will be consumed more willingly?
Well the verdict is in, and he loves it! And what’s not to love when it looks just like Pudding and tastes like it too! If you have a little one who loves Pudding cups, try making this recipe instead, you’ll be filling them with nutrients without them even knowing your doing it.

Simple Vegan Chocolate Avocado Spiced Pudding
1Tbsp cacao powder
2 tsp Raw Honey
1/4 tsp cinnamon
1/8 tsp cardamom
1/8 tsp nutmeg
1 pinch mineral salt
½ Avocado
1 Tbsp Coconut cream or water
Mash Avocado with a fork and stir in all ingredients.
For a smooth Pudding consistency, use an immersion blender for a few seconds till desired thickness is achieved
